Palmer Food Services is a fifth-generation broadline foodservice distributor rooted in Rochester.

What inspired the founding of your company, and what was its original mission?

In 1850, Levi Palmer began as a fishmonger in Rochester’s Center Market, serving the rapidly growing community with dependable, high-quality fish from Lake Ontario.

What were the most significant milestones or turning points in the company’s 50+ years in business?

With the development of frozen technology (early 20th century), the business expanded beyond local freshwater fish into broader seafood offerings, including coastal oysters shipped by barge. As hotels, boarding houses, restaurants, and later schools grew (mid-century), wholesale foodservice began to overtake retail as the dominant side of the business — marking a structural pivot from storefront to distribution.

How have your core values and vision influenced the way your company operates?

Articulating the company’s deeper purpose: culture of caring, product quality, stewardship, faith and community responsibility — shifted our identity from what the company sells to what it stands for.

How has your company adapted to industry changes or economic challenges over the years?

Across economic downturns and competitive pressure, the consistent adaptation has been to broaden capabilities, modernize operations and double down on service and community roots rather than trying to out-scale national competitors.

What’s unique about your workplace culture that has contributed to your longevity?

Our longevity comes down to People, Product, Passion and Purpose — people who build lasting relationships rooted in trust, a commitment to quality product from our seafood roots to today’s full-line offering, a hands-on passion that treats every partnership as personal, and a deeper purpose centered on strengthening our community and serving something bigger than ourselves.

Our top near-term goals are to strengthen our position as the premier partner to independent restaurants and foodservice operations, continue investing in technology and logistics to improve efficiency and accuracy, and expand value-added programs that help customers grow profitably.

What are the key factors that have contributed to your company’s ability to stay competitive?

Our ability to stay competitive comes down to disciplined focus and regional strength: long-term customer relationships built on trust, a differentiated protein program rooted in quality and expertise, continuous investment in facilities and technology, and the agility of being locally led. Rather than trying to out-scale national broadliners, we compete by out-serving them.
