Cupcake shop to close as owner focuses on frosting, book

Heather Saffer, owner of Penfield’s Dollop Gourmet Cupcake Creations and winner of the Food Network’s popular show “Cupcake Wars,” is having an eventful December.

Saffer announced Thursday she plans to close her retail shop to focus on a new frosting business and a book deal.

Her retail location will close at 4 p.m. Dec. 24, Saffer said. At that point, Dollop Gourmet Cupcake Creations will become Dollop Gourmet Frosting, an all-natural and gluten-free line frosting flavors available on Dollop’s website, www.dollopgourmet.com.

In addition, Saffer has signed a publishing deal with Massachusetts-based Adams Media, which is a subsidiary of F+W Media Inc. Saffer said she plans to release her first book, “Dollop’s Book of Frosting,” in October 2013. The book is to feature diet-friendly frosting recipes.

“Everyone loves frosting, it’s the best part of any cupcake, and practically every customer I’ve ever had has at one point or another has eaten frosting on its own with a spoon,” Saffer said.

Saffer opened her retail location in June 2010. In February 2012, she competed and won a baking competition during an episode of “Cupcake Wars.” The victory earned Saffer $10,000.

Saffer said she is thankful to everyone who has supported the shop and is excited for the company’s next chapter.

“I want to focus on the book and the frosting, and getting a unique natural product in stores that doesn’t exist,” said Saffer. “I want to move forward with what excites me and what I see growth potential in.”
